My friend Kathryn and I have what we refer to as “girl dates” every so often and it had been a while since we had a good adventure. This particular girl date brought us to the wine country in Woodinville for a tour of Covington Cellars on Super Bowl Sunday (seemed very appropriate).
As we ascended on an industrial area, both of us were surprised to find that a winery had set up shop in what looked like a storage unit. Inside, there were glass topped wine barrel tables and rows upon rows of wine stored while it aged to full-bodied perfection. We learned all about the wine making process, the work the goes into even a smaller operation like the one we saw and the high cost for all the specialty equipment required to produce just a single bottle of wine.
After walking around the facilities, we sat down to try some amazing food prepared by the chef who works exclusively for that winery and had created the dishes to pair with the wines. I walked away from the experience with a true appreciation for wine…and I think Kathryn would agree that we both can’t wait to head back to Covington Cellars to enjoy some more delectable wine, good company and delicious food.
